Ordering
Is there a minimum order?
The minimum order is 1 kg per product. Each kilogram can be portioned as a whole piece, in 500 g portions, or in 250 g portions — select your preference at checkout.
Can I order as a gift?
We are currently building a curated gift set menu for private clients and businesses. If you are interested in gifting, please reach out via our enquiry form and we will work with you directly.
How do I pay?
We accept all major credit and debit cards via Stripe. All transactions are secured with SSL encryption. We do not store card details.
Can I cancel or amend my order?
Orders can be cancelled or amended within 12 hours of placement, provided they have not yet been processed. Contact us at info@wagyunikuya.com.au as early as possible.
Delivery
Where do you deliver?
We deliver Australia-wide. CBD and metropolitan areas receive fresh, vacuum-sealed orders. Regional and remote areas receive snap-frozen products dispatched at the peak of freshness to guarantee safe arrival regardless of transit time.
Is the meat sent fresh or frozen?
CBD and metropolitan orders are dispatched fresh and vacuum sealed. For regional and remote addresses, products are snap-frozen at the peak of freshness prior to dispatch. Snap-freezing does not affect flavour, texture, or quality — it ensures safe arrival over longer transit times.
How long does delivery take?
Metropolitan areas: 1–2 business days. Regional and remote areas: 2–5 business days depending on location. We dispatch Monday to Wednesday to avoid weekend transit, when delivery networks are less reliable.
Do I need to be home to receive the delivery?
It is highly recommended that someone is available to receive and refrigerate your order upon arrival. In the event no one is home, your order will be placed somewhere safe and secure, out of direct sunlight. We recommend retrieving the package within one hour of delivery.
Is shipping included in the price?
Shipping is calculated and added at checkout based on your location. We use Pack & Send and our own distribution network to ensure fast, reliable delivery.
Products
What does the MB score mean?
MB stands for Marble Beef score — the Australian equivalent of the Japanese BMS (Beef Marbling Standard). It measures the quantity and distribution of intramuscular fat on a scale of 1 to 9+. MB9+ represents the highest attainable grade and indicates exceptional fat coverage throughout the muscle.
What is the difference between Snow Beef, Matsusaka, and Citrus-Fed Wagyu?
Snow Beef is a Hokkaido-raised Kuroge Washu known for fine, even marbling and a clean flavour. Matsusaka is one of Japan's three great beefs — prized for its extraordinarily soft fat texture and aromatic intensity, exclusively from virgin heifers in Mie Prefecture. Citrus-Fed Wagyu is our Australian offering, from a Queensland programme that produces MB9+ product with a bright, distinct fat character. Each is exceptional in its own way; the right choice depends on the occasion and preference.
What does JMGA certified mean?
The Japan Meat Grading Association (JMGA) is the independent body responsible for grading Japanese beef. A JMGA certificate confirms the carcass yield grade (A–C) and quality grade (1–5) including the BMS score. We include a grading certificate with every Japanese wagyu order as proof of authenticity and grade.
How are the portions sized?
Each kilogram can be portioned three ways: as a whole piece, in 500 g portions, or in 250 g portions. Select your preference at checkout. All portions are individually vacuum sealed and hand-trimmed — any unnecessary and excess fat, connective tissue and sinew removed.
Do you stock other cuts or grades?
Our available cuts vary based on supply. Subscribe to our newsletter for stock alerts, or contact us directly if you are looking for something specific.
Can I expect every piece to look identical?
We hand-select and trim every cut to our standard, but the nature of beef means no two pieces are biologically identical. Marbling patterns, colour, and fat distribution vary naturally within the same grade — this is a characteristic of real, unprocessed product, not a flaw. What we guarantee is that every piece dispatched meets our selection criteria. If a cut does not meet our standard, it does not leave our facility.
After Delivery
How should I store my order when it arrives?
Refrigerate immediately at 0–4°C. Do not open the vacuum seal until you are ready to cook — the seal is what preserves freshness. Once opened, consume within 2–3 days.

How long does the meat keep?
Vacuum sealed and refrigerated: up to 2 weeks from dispatch. Frozen (−18°C or below): up to 6 months. Quality is best when consumed as fresh as possible.
My order arrived damaged or incorrect. What do I do?
Contact us within 24 hours of receiving your order at info@wagyunikuya.com.au with your order number and a photo. We will arrange a replacement or refund where the issue is within our control. Please refer to our Terms & Conditions for our full refund policy.
Do you supply restaurants or hospitality businesses?
Yes. We work with a number of Sydney restaurants and omakase venues. For trade pricing, volume orders, and supply arrangements, please submit a Trade enquiry.
